Food & Beverage Manager (CC)

Silverspot Cinema offers the true film lover the most diverse, unique and compelling film experience. We are expanding across the country (FL, NC, and OH, and WI)

Silverspot Cinema is now seeking a Food and Beverage Manager.  This person will oversee and coordinate the planning, organizing, training and leadership necessary to achieve stated objectives in sales, costs, marketing, employee retention, guest service and satisfaction, food & beverages quality, cleanliness and sanitation.

 

Duties & Responsibilities:

  • Understand completely all policies, procedures, standards, specifications, guidelines and training programs.
  • Ensure that all guests feel welcome and are given responsive, friendly and courteous service at all times.
  • Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards.
  • Achieve company objectives in sales, service, quality, appearance of facility and sanitation and cleanliness through training of ambassadors and creating a positive, productive working environment.
  • Control cash and other receipts by adhering to cash handling and reconciliation procedures in accordance with restaurant policies and procedures.
  • Make employment and termination decisions consistent with General Manager guidelines for approval or review.
  • Fill in where needed to ensure guest service standards and efficient operations.
  • Continually strive to develop your staff in all areas of managerial and professional development.
  • Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.
  • Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs.
  • Ensure that all products are received in correct unit count and condition and deliveries are performed in accordance with the restaurant, bar & concessions receiving policies and procedures. 
  • Oversee and ensure that restaurant, bar & concessions policies on ambassador performance appraisals are followed and completed on a timely basis.
  • Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when, and as needed and labor cost objectives are met.
  • Be knowledgeable of restaurant, bar & concessions policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.
  • Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, bar & concessions, ambassadors and guests. Comply with Serv-safe certifications standard and up to date with the responsible vendor program.
  • Provide advice and suggestions to General Manager as needed.
  • Open or close the Cinema as scheduled, performing MOD functions.
  • Review P&L’s statements in all areas for accuracy (restaurant, bar & concessions)
  • Responsible for monthly Inventories or when the company requires this to be done, to be deliver the same day to the GM for approval. (restaurant, bar & concessions)
  • Motivate the staff with various incentive programs for all areas. Prices to be approve by GM
  • Hold a monthly meeting with all F&B Staff.
  • Build and Improve SPH and incremental sales. Upselling, suggestive Sells, Seasonal menus, promotions, etc. 
  • Weekly schedule to be deliver on time
  • All orders to be submitted to the Purchase department every Sunday before 5pm using the Purchase Request form.
  • Bar supplies and mixer orders given to the KM by Sunday at 3:00 pm
  • Keep Menus up to standard. (Clean, updated and in good conditions)
  • Coordinate all Events with the Event Manager. 
  • Hold Daily pre-shift meetings with staff
  • Help plan and implement all Silverspot Promotions, to include printing Promo materials, POS screens & Advertising
  • Coordinate all F&B issues with Corporate F&B Director and with CHG Consulting 
  • Utilize the Opening and Closing Checklists in all areas of operation
  • Ensure Steps of Service are followed in all service scenarios

 

In Theater Service

  • Build and Improve SPH and incremental sales. Upselling, suggestive selling of Combos and drinks. 
  • Achieve regular increases in Hit Rates for ITS deliveries. Track and review results and share with the team
  • Hold Daily pre-shift meetings with staff.
  • Weekly schedule to be deliver on time.
  • Cross train Staff from Concessions and ITS. This will allow us to be flexible and able to help deliver excellent service in both areas.
  • Ensure that all packaging standards for In Theater products are followed
  • Make all staff aware of time standards for deliveries and ensure that all teammates stay aware during the shift
  • Regularly inspect items for quality and product presentation standards
  • Keep adequate ITS supplies including bags, condiments, wet naps & paper computer rolls
  • Make sure that every shift is stocked ahead of time and set up for success
  • Generate all ITS documents including the daily movie schedule / theater assignment sheets
  • Keep Menus up to standard. (Clean, updated and in good conditions)
  • Responsible for all technology items including tablets, printers, KDS & radios. Establish procedures for storage and charging

 

Concessions

  • Staff Schedule written and approved by Wednesday for the following week
  • Responsible for the Concessions Purchase order by Friday at 4:00 pm. To be send to the purchasing department
  • Responsible for the Coke beverage order by Saturday at 4:00 pm. To be send to the purchasing department
  • Responsible for the Liquor, Beer & Wine orders to Purchasing by Sunday at 4:00 pm. To be send to the purchasing department
  • Hold Daily pre-shift meetings with staff.
  • Review inventory for Variation %’s on the usage and notify any outstanding differences. (More than 2%)
  • Make sure that every shift is stocked ahead of time and set up for success
  • Ensure that the condiment counter is constantly stocked, including after closing to prepare for the following day
  • Establish a deep cleaning schedule for the Concessions are to include all equipment and beverage machine

 

Salary Range is between $45,000 to $50,000 a year  + Benefits (Medical / Vision / Dental / Life Insurance)

 

Requirements:

  • 5+ years experience in food service industry (preferably running different F&B departments).
  • Must be fluent in English  (additional languages preferred, however not required)
  • Be able to work nights and weekends
  • Have above average understanding of Microsoft Office (Excel, Word, Outlook)
