Catering Manager

Job Description

This position is a key leader within dining services. Our Catering Manager will lead and grow the Catering and Food Truck operations of the college. This fast paced position will oversee the set-up, execution and breakdown of all catered events to comply with established standards of service for the Roanoke College community.

Key Responsibilities:

  • Responsible for meeting with catering clients, establishing menus, soliciting pricing updates with supervisor, room reservations and service expectations.
  • Directs catering operations, including waited table service, buffet lines, continuous break stations, and bars serving alcohol and non-alcohol options, and food truck.
  • Complete daily financial deposits and maintain financial records and reporting.
  • Compile appropriate sales tax filing for appropriate jurisdiction for external catering and food truck events.
  • Actively participates in weekly planning meetings, resolving concerns between departments, and communicating effectively with other personnel involved in preparing for catered events.
  • Supervises day-to-day work activities of catering staff by delegating authority, assigning and prioritizing activities and monitoring operating standards.
  • Responsible for proper storing and disposing of all food after all catered events and enforcing proper methods of safety and sanitation during events.
  • Responsible for the cleanliness and order of the ballroom kitchen and areas where catering supplies are stored.
  • Maintain appropriate licensure and regulatory documentation (i.e. VA ABC inventory, reporting, and licensing requirements; and food truck inspections and licensing requirements).
  • Responsible for the care and returning of all equipment after catering events.
  • Responsible for accurate billing based on event headcount, product usage, and other factors impacting costs.
  • Responsible for managing the Catering department through good stewardship of resources and regular auditing and evaluation of operational and financial performance of Catering.
  • Establishes operating standards, implements quality improvements and communicates them with employees.
  • Facilitates pre- and post-event reviews for recurring or other large/specialty events with dining and key event stakeholders to review event successes and opportunities for improvement for future and recurring events.
  • Maintains recurring meeting commitment with Director of Auxiliaries Services to keep apprised of operations and operational needs.
  • Creates and maintains operational excellence by developing training collateral, cleaning checklists, event pull lists, hosting regular training and professional development for staff, and maintaining strong, positive relationships with clients, dining management and employees, and clients and stakeholders.
  • Assist in ensuring open and clear communication by maintaining up-to-date and accurate event sheets (BEOs), event calendars, and employee schedules.
  • Serves as a representative of Roanoke College, displaying courtesy, tact and respect in all interactions with our students, members of the RC community and with the general public.

Education, Experience, Skills, and Abilities:

  • Required: High school diploma
  • Preferred: Associate’s Degree or higher in Hospitality, Culinary, Business, or related field from an accredited institution.
  • Excellent communication skills with an ability to quickly resolve issues and adapt to last minute changes and event requests.
  • Demonstrated supervisory experience with hiring, managing, and scheduling employees.
  • Uses cloud-based catering software (i.e. SpoonFed), inventory and menu management software, and other productivity software (i.e. Microsoft Outlook, Word, and Excel) to generate catering event sheets, event calendars, and billing invoices.
  • Required: At least 3 years catering management experience in a high-volume setting, with preference to residential college experience.
  • Required: Minimum of 2 years of Catering supervisory experience.
  • Required: Legally able to open, dispense, and transport alcoholic beverages.
  • Required: Ability to work well with others
  • Required: Strong sense of responsibility, ability to work independently, and strict adherence to time-based tasks
  • Required: Must have a valid U.S. Driver’s license and be eligible to operate motor vehicles.
  • Required: ServSafe Certified—or become ServSafe Certified within 6 months of starting position.
  • Required: TIPS Certified—or become TIPS Certified within 6 months of starting position
  • Required: Able to work a flexible schedule, including days, nights, weekends, and holidays.
