Production | Napa, CA | Full Time | From $25.00 to $33.00 per hour

JOB DESCRIPTION

The Enologist will work closely with Winemakers to maintain, blend, and perform analysis on the complete portfolio of wines stored at the Hess Persson Estates Mount Veeder location. ESSENTIAL DUTIES AND RESPONSIBILITIES:

In collaboration with the winemaker, coordinates wine production activities through crush, fermentation, clarification, aging, blending, and bottling.

Monthly screening of all wines in inventory for analytical, microbiological, and organoleptic soundness and creating the topping work for the cellar.

Post-unit process analysis following racking, transfers, blending, filtration, additions, bottling, etc.

Work under minimal supervision to perform crush analysis, grape samples, incoming grape analysis, needed tartaric acid additions to fermentations, and monitoring fermentations.

Bottling line operation quality control, following the bottling line quality control worksheet, focusing on the adherence of the wine and packaging to our quality standards.

All additions including yeast and nutrients to small lot fermenters.

Malolactic fermentation inoculation and monitoring.

Set up and participate in tasting fining trials for blends, and bottling.

Suggest, conduct, analyze, and report trials.

Supervises and train temporary harvest lab staff.

Attend classes, seminars, meetings, and other venues offering new knowledge.

Data entry of both analysis and bulk wine tracking into Winemakers Database.

Work order creation under the guidance of the winemaker for daily cellar operations.

Cellar duties including racking, topping, blending, drain and pressing.

Work with HACCP and SQF team to review and maintain SOPs of the food safety management system

Other duties and responsibilities as required.

QUALIFICATIONS REQUIREMENTS:

Bachelor’s degree or education plus experience equivalent

Bachelor’s degree in chemistry, fermentation science, or the equivalent.

1-2 years minimum experience in a lab, with cellar skills a plus.

Proficient in laboratory and computer skills.

Strong written, verbal, and mathematical skills in both English and Spanish is a plus.

This role’s compensation is anticipated to fit within the range of $25-$33 per hour. These figures represent what we reasonably expect to pay for this position, but the actual compensation offered will depend upon numerous job-related factors, including but not limited to candidate skills, experience, knowledge and education.
